Wash and dry your greens as you use them.
Garlic Scapes: These are the edible and treasured flower stalk that grows on garlic. They are harvested before flowering to save the energy for the garlic bulb. These are a special treat that are here for a limited time. They can be sliced and frozen without blanching. They have a mild garlic flavor. Excellent pickled.
Hakurei Turnip: eaten raw or cooked, scrub no need to peel; great in salads, sauté, roasted, pickled
Swiss Chard: Can be eaten raw or cooked; eat the stems too – cut small and sauté; use in place of spinach in recipes; use as a wrap; One of my favorite ways to eat chard is to steam for 2 minutes and drizzle with Crystal City Persian Lime Infused Olive Oil
Farm Update:
We are still working on completing the high tunnel. Almost there!! We are having issues this season again with the deer munching on the swiss chard. They rip open the row covers and pull the plants out. We are finishing preparing the beds to transplant the winter squash. We need to complete the straw mulch in between the rows. This week will be a challenge with the heat wave. We should have snow peas next week – fingers crossed!

Join us at the farm Saturday, June 29th! Take a walk around the farm and see where and how your veggies are grown. We will provide light seasonal snacks and beverages.
