Wash and dry your greens as you use them.
Garlic Scapes: These are the edible and treasured flower stalk that grows on garlic. They are harvested before flowering to save the energy for the garlic bulb. These are a special treat that are here for a limited time. They can be sliced and frozen without blanching. They have a mild garlic flavor. Excellent pickled.
Asian Greens – This week – Pac Choy and Komatsuna and Mizuna- eaten raw, steamed, stir fry
Snow Peas – blanch and use in salads, snack on hummus, trim stem ends and pull strings off; to blanch trim and boil for 1-2 minutes, they will be bright green, then drain and plunge into ice bath to stop cooking; drain once cool and store in the fridge or freeze.
