Snow Peas

snow_peas     Storage:  plastic bag in the refrigerator; best eaten within a few days

Freeze: Wash thoroughly, remove stems and leave peas whole; Blanch (plunge into boiling water) for 1 1/2 minutes and chill quickly in ice cold water; Drain off excess moisture, package in airtight containers or freezer bags and freeze immediately.

Best Uses:  Stir-fry, saute, raw in salads, simply nibbled raw

2 cups trimmed = 1/2 pound (225g), trimmed / 1 1/2 cups trimmed = 4 oz (115g), untrimmed / 2 cups fresh = 6 oz (170g) frozen

HOW WE GROW IT: Peas are direct seeded with a walk-behind seeder as soon as we are able in the spring. (Which has been a challenge these past few years with early flooding)
