Swiss Chard: Can be eaten raw or cooked; eat the stems too – cut small and sauté; use in place of spinach in recipes; use as a wrap; One of my favorite ways to eat chard is to steam for 2 minutes and drizzle with Crystal City Persian Lime Infused Olive Oil

Komatsuna: eaten raw or cooked; steamed, salads, stir-fry, or soups

Farm Update:

The potatoes have sprouted! Time to scout for potato beetles. This season we planted 400# of Dark Red Norland, 400# of Keuka Gold, 100# of Adirondack Red, 100# of Adirondack Blue. We purchase our organic certified seed potato from Nature’s Circle Farm. As a CSA Member you get the opportunity to harvest them with us in August and bring home a bag of freshly dug potatoes. The snow peas have blossoms. That generally means we should have snow peas in about 2 weeks. Everything has gotten plenty of rain this past week. We are unable to do any tractor work in the field until it dries out a bit. We need the soil to dry to prepare to plant the winter squash transplants (spaghetti, butternut, acorn, and delicata). We are still working on finishing the construction of the new High Tunnel. It turns out you can carefully climb a ladder with a walking boot.
