Garlic: Use in everything!! Well, almost everything. Roasting mellows and deepens the garlic flavor. Quick Recipe: Roast in an air fryer: foil pouch, cut off very top of garlic head to expose tops of cloves, lightly drizzle with olive oil, air fry at 390 degrees for 10-20 min. Carefully open pouch and air fry for 5 more minutes to carmelize. Use roasted garlic on bread, in hummus, added to dressings and dips.

Parsley: wilted parsley? recut the stems, place in cold glass of water. Store like this and change water daily; Not using it right away? Store wrapped in a paper towel in a produce bag; add a bit of parsley to anything you can. It really brightens up a dish with a fresh flavor. Can be frozen on the stem: stuff clean and dry parsley in a freezer baggie and pull off leaves as needed. Can be dried: hang bunch in a well ventilated area and remove leaves or use a dehydrator

Eggplant: We hope you love eggplant! Our plants are doing exceptionally well this season. We have 4 varieties growing. Our favorite is grilled, but there are several delicious ways to prepare besides eggplant parm. Basically flavorless, you can season it with whatever flavor profile you prefer. It pairs well with a variety of flavor profiles: Italian, Mexican, Asian, and Curry. Grilled, braised, roasted, cooked, on pizza, and blended. Very versatile veggie! Need more inspiration? Grilled eggplant for baba ganoush – stab slits, push in garlic cloves, grill on medium indirect turning every so often until tender – use in your recipe with the roasted garlic.

Peppers: can be chopped, sliced, minced and frozen without blanching. Jalapeno heat comes from the seeds and membrane, remove to reduce heat, use gloves if possible. Jalapenos are excellent in cornbread. Freezing: prepare how you intend to use them. Not a fan of a lot of heat? Freeze them after tiny dicing them in a baggie making square indents for easy removal of a small chunk or ice cube tray. Frozen peppers can be used in scrambles, cassaroles, soups, breads, on pizza, in sauces, and sautes.

Scallions: can be thinly sliced and frozen, no blanching, will not be as crisp but still add color and flavor once frozen.

From the Field

The new rotary mower is on the farm. Now to catch up on all the mowing that needs to be done. We are looking forward to the next week of milder temperatures and a few clouds. It has been brutal working out in the fields this season. It has been in the 80’s hot and humid since June which has been unusual for the hot temps to last so long and start so early. This is what we would expect for August and here we are with milder temps. We did get some rain yesterday. Several storms have passed us. The first of the tomatoes from the new high tunnel. We have plenty of water in the pond for irrigation. Winter squash is looking good.
