Veggie Notes: Wash your veggies prior to use. Your greens were not washed at the farm this week. Your greens will store better and last longer if you rinse them just prior to using.
Quick Tips: Greens cook quickly and shrink in volume. Do not overcook aim for bright green and slightly wilted. Radishes can be spicy – cook them and they mellow but keep the crunch – add to a stir-fry. Quick stir fry sauce recipe
Komatsuna has a fresh, sweet taste and a crunchy texture. It is a very versatile vegetable and can be eaten raw, pickled, stir-fried, boiled, used fresh in salads, or added to soups. It is popular in soups as it can stay firm after being simmered. It is an excellent source of calcium, vitamin A, and vitamin C.
Mustard Greens– spicy – mellow when cooked – not recommended for smoothies
