In your CSA share this week:
- Red Kale
- Swiss Chard
- Arugula
- Radish
- Bok Choy
- Green Giant (komatsuna)
Veggie Notes: Wash your veggies prior to use. Your greens were not washed at the farm this week. Your greens will store better and last longer if you rinse them just prior to using.
Komatsuna has a fresh, sweet taste and a crunchy texture. It is a very versatile vegetable and can be eaten raw, pickled, stir-fried, boiled, used fresh in salads, or added to soups. It is popular in soups as it can stay firm after being simmered. It is an excellent source of calcium, vitamin A, and vitamin C.
Storage and usage tips and recipes can be found in the Vegetable Directory
Quick Tips: Greens cook quickly and shrink in volume. Do not overcook. Radishes can be spicy – cook them and they mellow but keep the crunch – add to a stir-fry
