From the field
The garlic is planted!! In between the rain and snow, Joe was able to get all of the garlic planted and covered in its winter blanket of straw. We save our own seed for garlic. The larger garlic bulbs are saved for planting. We break apart all of the bulbs and plant a singular clove that will grow into a bulb that is harvested in July. This year we plant approximately 3000 cloves. This year the 10 beds are about 100 feet each and 3 rows per bed with cloves planted about 12 inches apart. The breaking up of bulbs, planting, and straw mulching are done by hand. It is planted in a place on the farm where we haven’t planted it in the past. When you attend our annual garlic harvest in July, you will walk to a new part of the farm that you haven’t been to before. For those of you that have been here it is located in the field further to the west of the current high tunnels, which you can see in the distance in the photo.

Veggie quick tips:
Shallots: Most of our shallots got washed out in the flooding in the spring. We had enough to send home a few to everyone in the extension share. Prized by chefs, shallots have a mild more delicate flavor than onions and are an excellent choice for salad dressings.
Delicata Squash: Surprise!! We had enough to give everyone another round of delicata.
Butternut: roasting, soup, salads; sometimes I just peel, dice and cook in a pan on the stove until tender then top with either maple syrup and yogurt for breakfast or any seasoning that goes with my meal like chili powder, thyme, salt and pepper
Bok Choy: soup, salad, or stir-fries
Cabbages: can peel leaves to use slowly, shredded, roasted, soups, salads, stir-fry;
Hakurei Turnip: mild salad turnip that can be eaten raw or cooked; great in salads, roasted, shredded or sliced for a crudite plate. Do not need to be peeled, just give them a good scrub.
Radish: use in salad, stir-fry or roast; yes you can use an air fryer
