Storage: Avoid storing sweet potatoes in the refrigerator, which will produce a hard center and unpleasant taste. Instead, store your sweet potatoes in a cool, dry, well ventilated container
NOTE: Sweet Potatoes come in many shapes and sizes. Our sweet potatoes are not meant for long-term storage. We do not have the facilities to cure sweet potatoes for long term storage. Also, this is a specialty crop that is costly and manually intensive to grow and harvest. The sweet potatoes sometimes break off during harvest. Some of your potatoes may be broken off – we recommend eating as soon as possible.

Roasted Sweet Potato Rounds - Preheat Oven- 450 / Cooking time: 15-20min Scrub sweet potato with brush - no need to peel. Cut into 1/4 inch rounds Tbsp Olive Oil mix with 1/2 tsp salt & garlic powder, 1/4 tsp black pepper Toss in large bowl to coat Lay in single layer on rimmed baking sheet on parchment paper (if possible- they will crisp up better) Check for tenderness in 15 minutes-should be soft so fork inserts easily bake to your desired crispness NOTE-pictures shown are 1 1/4 lbs - you have this in your share (Ext WK#5) You could also go sweet instead of savory and toss with maple syrup, cinnamon, ginger.
