Yukon Gold Potato Wedge Oven Fries

Preheat oven to 500 degrees

Scrub potato, rinse, cut into wedges, rinse, drain, drizzle with olive oil, toss to coat, sprinkle with salt and pepper to taste

Place in single layer on a cookie sheet, bake until desired crispness is reached
