Mustard Greens with Balsamic

Ingredients

  • ½ lb mustard greens, large stems removed, roughly chopped
  • 1 tbsp olive oil
  • 2 cloves garlic, sliced thin
  • tsp red pepper flakes
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste
  • 1 tsp lemon juice

Instructions

Prepare the vegetables

  • remove any large stems from the mustard greens, trim from bottom of leaf. If the stem is large fold the greens and remove with a knife. (stems can be eaten but would need to be added to pan to cook first and longer)
    Rough chop and rinse your greens but do not dry
    Slice the garlic cloves thin

Cook

  • In a large sided skillet, add the oil, garlic, red pepper flakes and heat to medium. Once the garlic is fragrant and begins to sizzle but not browning add the chopped greens to the pan. Stir them can cook for about 5-7 minutes until they begin to wilt.
  • Pour the balsamic vinegar over the greens. Stir to coat evenly. Continue to cook for another r2-3 minutes until the greens are tender.

Season and Serve

  • Remove the pan from the heat. Add salt, pepper, and lemon juice to taste. Serve warm as side dish.
