
Miso-Glazed Daikon and Komatsuna Stir-Fry

Ingredients
- 1-2 Purple Daikon, sliced thin (250 grams/ ½ lb)
- Komatsuna, roughly chopped (200 grams)
- 2 cloves garlic, minced
- 2 tbsp miso paste
- 1 tbsp soy sauce or tamari
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp maple syrup
- 2 tbsp sesame seeds, toasted
- salt and pepper to taste
Instructions
Prepare the miso glaze
- In a small bowl, mix together the miso paste, soy sauce, sesame oil, rice vinegar, and maple syrup until smooth and well combined.
Cook the diakon
- Heat a large skillet over medium heat. Add a splash of water or a little sesame oil to prevent sticking. Add the sliced daikon and cook for about 5-7 minutes, stirring occasionally, until the daikon starts to soften.
Add garlic and komatsuna
- Add the minced garlic to the skillet and cook for and additional 1 minute until fragrant. Then, add the roughly chopped komatsuna and cook for 3-5 minutes, or until the greens are wilted
Add the miso glaze
- Pour the miso glaze over the daikon and komatsuna. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until everything is nicely glazed and the flavors meld together. Season with salt and pepper to taste.
Garnish and serve
- Sprinkle the toasted sesame seeds over the stir-fry. Serve hot as a main dish over rice or noodles for a complete meal
Notes
Prep tip: Slice daikon thin and evenly with a mandoline.
Variations: Any greens of your choice could be used – example – baby spinach, bok choy, mizuna, kale, chard.
To toast sesame seeds: in a small skillet add the sesame seeds and heat to medium for about 5 minutes stirring occasionally or until seeds begin to brown lightly. If browning too quickly turn down heat.
