Miso-Glazed Daikon and Komatsuna Stir-Fry

- 1-2 Purple Daikon, sliced thin (250 grams/ ½ lb)
- Komatsuna, roughly chopped (200 grams)
- 2 cloves garlic, minced
- 2 tbsp miso paste
- 1 tbsp soy sauce or tamari
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp maple syrup
- 2 tbsp sesame seeds, toasted
- salt and pepper to taste
Prepare the miso glaze
In a small bowl, mix together the miso paste, soy sauce, sesame oil, rice vinegar, and maple syrup until smooth and well combined.
Cook the diakon
Heat a large skillet over medium heat. Add a splash of water or a little sesame oil to prevent sticking. Add the sliced daikon and cook for about 5-7 minutes, stirring occasionally, until the daikon starts to soften.
Prep tip: Slice daikon thin and evenly with a mandoline.
Variations: Any greens of your choice could be used - example - baby spinach, bok choy, mizuna, kale, chard.
To toast sesame seeds: in a small skillet add the sesame seeds and heat to medium for about 5 minutes stirring occasionally or until seeds begin to brown lightly. If browning too quickly turn down heat.
