Apple Cider Glazed Turnip
Delicious side dish
Ingredients
- 2 Tbsp butter (plant-based)
- 2 pounds turnips 1/4 -1/2 inch dice
- 2/3 cup apple cider
- 3 tbsp brown sugar
- 1/4 tsp fine sea salt
- 2 Tbsp finely chopped parsley
- 1/4 tsp ground black pepper
Instructions
- Scrub the turnips, cut the root and stem ends, and then peel. Cut the turnips into ¼ to ½" slices and then into similarly sized cubes. Try to cut the pieces even. They will not all be the same since the turnips are round, but cube size can affect cooking time.
- Melt the butter in a saute pan or braising pan on low heat
- Carefully add the turnips; stir to coat
- Combine the cider, sugar, pepper, and salt. Turn the heat to medium. When the turnips begin to sizzle, add the cider, sugar, pepper, and salt. Stir; keep the turnips covered in the liquid
- Increase the heat and bring to a boil, then reduce to a gentle bubbling simmer. Stir occasionally – every 5 minutes and keep pieces in the braising liquid.
- While your turnips are cooking, finely chop the parsley
- As the turnips cook, they will become more translucent and tender. As the liquid slowly cooks out, they will become golden brown and caramelized.
- In the final minutes, as the liquid is evaporated and absorbed, stay close to your pan and stir more frequently to caramelize the pieces evenly.
- Once cooked to your desired tenderness and caramelization, toss in your finely chopped parsley. Toss or stir to combine. Taste and adjust the salt and pepper if necessary.
Notes
If you prefer a more hands-off version, this recipe cooks in the oven. I have not tried this one yet, but I imagine the results are similar.
