Snow Pea Stir Fry

Ingredients

  • 2 cups snow peas, trimmed cut diagonal
  • 1 cup asian greens
  • 1/3 cup garlic scapes, cut diagonal thin slices about 2 scapes
  • 2-3 radish, cut into matchsticks
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp maple syrup
  • 1/4 tsp red pepper flakes
  • salt and pepper to taste

Instructions

Prep your veggies

  • trim snow peas – pinch to remove stem and pull down to remove string and cut into diagonal bite size pieces
  • slice garlic scapes into thin diagonal pieces
  • slice radish in thin rounds, stack and cut into matchsticks
  • rough chop the asian greens

Prepare the seasoned sauce

  • whisk together and set aside
    1 tbsp soy sauce, 1 tbsp lime juice, 1 tsp maple syrup, 1/4 tsp red pepper flakes

Stir Fry

  • heat the skillet or wok to medium-high heat, add the sesame oil
    2 tbsp sesame oil
  • add the garlic scapes, saute and cook for about 1-2 minutes, be careful not to burn, stir and lower heat if necessary
    1/3 cup garlic scapes, cut diagonal thin slices
  • add the snow peas, asian greens, and radish stir and cook for about 5 minutes until the vegetables are tender but still crisp and bright green
    2 cups snow peas, trimmed, 2-3 radish, cut into matchsticks, 1 cup asian greens
  • add your seasoned sauce, stir and cook for 1 additional minute to combine
  • season with salt and pepper to taste
  • serve over rice or noodles

Notes

Optional add in:
fresh basil leaves that are sliced thin into ribbons can be added in the final step after cooking is complete to just lightly wilt the leaves.
