Prepare the batter

  • In a large bowl, combine the flour, baking powder, salt, soy sauce, sesame oil, 1/2 cup water mix well and add more water if necessary to achieve a smooth batter
1 cup all-purpose flour , 1 tsp baking powder, 1/2 tsp salt, 1 tbsp soy sauce, 1 tbsp sesame oil, 1/2-3/4 cup water

  • Shred the cabbage as fine as possible. A mandoline is great for this. Finely chop the green onion tops.

Mix with the batter

  • Add the shredded cabbage and green onion tops to the batter and mix well until it is all coated in the batter
4 cups green cabbage shredded, 2 green onions, finely chopped

Cook the pancakes

  • Heat pan to medium. Give your pan time to heat thoroughly. This helps your pancake to not stick to the pan. Add a thin layer of oil and drop 1/4 cup of the cabbage batter mixture then press into pancake shape in a thin layer. Allow to cook for 3-4 minutes on each side until golden brown and crispy. Remove from pan and drain on paper towels. Repeat – makes about 12 pancakes.
oil for frying – grapeseed, canola
