
Butternut Squash and Turnip Mash

Ingredients
- 4½ cups butternut squash, peeled and diced ½" (700g)
- 3 cups turnip, peeled and diced ½"
- 2 tbsp olive oil
- ¼ cup milk (any unsweetened plant-based milk)
- ½ tsp salt and ¼ tsp pepper or to taste
- 1 tbsp nutritional yeast (optional)
Instructions
Prepare the vegetables
- Peel and dice the butternut squash and turnips into roughly ½-1" inch cubes
Boil the vegetables
- Place diced squash and turnips into a large pot. Cover with water and add a pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 20 minutes, or until the vegetables are tender.
Drain and Mash
- Drain the cooked vegetables and return to the pot. Add the olive oil and milk. Use a potato masher or fork to mash until smooth or to our desired consistency.
Season
- Stir in salt, pepper and nutritional yeast (if using) to taste. Adjust seasoning as needed.
Serve
- Transfer to a serving dish and enjoy your creamy mash!Garnish with fresh herbs and sprinkle of seasoning of your choice.
