Quick Tips & Recipe ideas: Wash your greens this week!! We did not wash the Tatsoi, bok choy, or turnip this week. They will last longer for you but must be washed at home. Butternut Squash: Roasted, soup, mashed, baked goods-muffins, breads, pies (Did you know that you can make a “pumpkin pie” with butternut puree?) Cut in half scoop out the seeds and roast whole or cube before roasting; the skin can be eaten although generally peeled when cubing for roasting and definitely peeled for soup. Tomato: The field tomatoes are over. However, the heirlooms in the hoophouse are still producing some. We are not sure if this is the final week or not. Eggplant: great roasted or on the grill, great addition to stir-fry or curry Hakurei Turnip: You had these in the spring; eaten cooked or raw; Yes, you can eat the greens – so nutritious; they cook very quickly, don’t over cook, toss in toward the end of a stir-fry; they will be bright green and lightly wilted; turnip burgers – use the greens and the turnips; sauté the turnips in a pan with garlic and butter with the chopped greens- add a dash of lemon or lime juice; Beans: blanch for freezing, great in stir-fry, curry, side dish simmered with tomato and garlic and onion Tatsoi & Bok Choy: eaten raw or cooked, smoothies, soup, salads, stir-fry Celery: the last of the celery; addition to stir-fry, salads, tops can be used too-chop finely like parsley for celery flavor Red Onion: raw or cooked, we love to slice these thin for sandwiches, pickled, salads, or cooked Garlic: Have you ever roasted garlic? So delicious The temperatures are going down it is roasting season How to roast garlic Peppers: can be seeded, sliced or diced and frozen without blanching
