Roasted Savoy Cabbage Wedges

- ½ lb savoy cabbage, cut into wedges
- 1 tbsp olive oil
- garlic powder to taste
- salt and pepper to taste
Preheat oven to 400℉
Arrange cabbage wedges on a parchment lined baking sheet. Drizzle or brush with olive oil. Generously sprinkle garlic powder, salt, and pepper.
Roast in preheated oven for 20-25 minutes, turning half way through, until the edges are golden brown and the cabbage is tender
Prepare a drizzle sauce while the cabbage is roasting. See notes for options. My favorite is the balsamic glaze.
To serve drizzle your sauce of choice over top. Enjoy!
Spicy Maple Mustard Sauce:
Combine: 2 tbsp dijon mustard, 1 tbsp maple syrup, 1 tsp apple cider vinegar, 1/2 tsp sriracha
Balsamic Glaze:
Combine: 1/4 cup balsamic vinegar, 1 tbsp maple syrup in a small sauce pan. Bring to simmer over medium heat and cook for about 5-7 minutes or until the mixture has reduced by half and has a syrupy consistency. Be careful not to burn.
Lemon-Tahini Drizzle:
Combine: 2 tbsp tahini, 1 tbsp lemon juice, 1 tsp maple syrup, 1 clove garlic minced, 2-3 tbsp water (adjust for desired consistency), salt to taste
