Celeriac (Celery Root)

Storage: Roots – Refrigerator – maintain moisture; Tops – store separately or freeze for future use to flavor soups/stocks

Uses : Root – cooked – excellent in soups, stews, or mashed; can also be eaten raw thin slices or grated into salads; instense flavor can dominate a salad

Tops: Celeriac’s leaves and stalks are edible and can be used to flavor soup stocks, but use sparingly as they are more potent than common celery. The leaves can also by thinly sliced and used in place of celery leaves or parsley.

Farm Favorite: We like ours roasted with other root veggies, added to soup or our absolute favorite recipe – Smashed Celeriac  by Jamie Oliver
