Tomatillo Salsa Verde

Ingredients

  • 1 lb tomatillos, husked and rinsed
  • 1 medium onion, quartered white onion
  • 2 jalapeno, stemmed (seeds removed for less heat)
  • 2 cloves garlic
  • 1/2 cup fresh cilantro leaves (10 grams)
  • 1 tbsp lime juice
  • salt to taste

Instructions

Preheat Oven

  • Preheat oven to 425℉

Roast the veggies

  • Place tomatillos, onion, jalapenos, and garlic cloves on a baking sheet. Roast for about 20 minutes until the tomatillos are soft and slightly charred. If veggies are soft but not charred you can place under broiler for 2-4 minutes. Watch closely and remove once desired charring is achieved.

Blend Ingredients

  • Transfer roasted vegetables to a blender or food processor. Add the fresh cilantro, lime juice, and a pinch of salt. Blend until smooth.
    Taste and adjust seasoning with more salt or lime juice if needed.
    1/2 cup fresh cilantro leaves (10 grams), 1 tbsp lime juice, salt to taste

Serve

  • Pour the salsa into a serving bowl. It can be served warm or chilled. Enjoy with tortilla chips, tacos, or as a topping for various dishes!
