Oven Roasted Fingerling Potatoes


If you have some fingerlings this is a must!

swish your fingerlings in a bowl of water a few times until water is pretty clear, you can use fingers to remove loose dirty bits, leave the skins on

cut fingerlings in 1/8″ to 1/4″ coin slices

toss in bowl with pressed garlic cloves, olive oil to coat, salt and pepper

Roast in 500 degree oven until  your desired crispiness, stir after 15 minutes to check.

Cut fingerlings should be in single layer on your cookie sheet
