**FINAL WEEK OF REGULAR SEASON** 2020 Extension begins next week

Quick Tips -Wash your greens prior to eating! Arugula – yes it is big and full of flavor. Have you tried arugula pesto? It is great on pasta or as a sandwich spread and can be frozen for later use. We also use arugula on sandwiches in place of lettuce. Vivid Choi Pac Choy – raw in salad, braised or stir-fry Peppers- stir fry, raw in salads, saute, or roasted. Can be frozen without blanching. Just remove seeds and chop, slice or dice how you would like to use them later and freeze in a baggie. Broccoli – Please be sure to give it a swish at home to remove any pests. Yes, you can eat the stalks too! We dice ours up and add to stir-fry and curries. Broccoli soup is one of the easiest. Red Radish and Watermelon Radish – both of these varieties are considered a storage radish. Meaning that with proper storage they will last for quite some time in your fridge. I tried something new last night. I used my vegetable peeler on the long red radish and cooked in my stir-fry like that- long thin and flat. It worked great. I like to chop, dice, and slice my veggies for a stir-fry into different shapes and textures. These storage radishes are good choices for cooking. You can find some recipes on our Pinterest Boards or these links Watermelon Radish with Rosemary brown butter or Roasted Watermelon Radishes or Butter glazed roasted radishes. Watermelon radishes are so beautiful and really add some color to salads. If you are looking for a salad to brighten a gloomy day try Ginger Carrot Radish Salad

FARM UPDATE: Finally getting some rain around here. That has been great for the cover crop but not so great for working the soil to get the garlic planted for next season. We are still working on completing quite a bit of field clean up. We are removing plant debris and ground cover then planting cover crop to keep the soil covered for winter and to incorporate as organic matter in the spring. What do we do over the winter?? We begin planning in December for next season, submit our organic recertification application in January to NOFA Certified Organic, LLC. We place our seed orders and inventory what materials we will need. We place our orders as early as we can. We decide if there are any equipment purchases that will increase our efficiency or quality of life since we are so limited on labor resources. We work on repairs and maintenance. Oh – we also like to take a little break. We will be in touch over the winter and let you know our progress in the spring. Our first seeds are started in the first week of March. Be sure to update us with any address or email changes.

**Note-We hope that you tried something new this season or you found a new favorite recipe. Please don’t feel bad if you didn’t get to all of your veggies and lost a few in the back of your fridge or crisper drawer. It happens to the best of us!
