Quick Tips Eggplant – Oh boy – this is growing fantastic this year. I am guessing that you may be in need of some ideas. Be sure to look at the vegetable directory Eggplant Page or Pinterest board for ideas Parsley -can be stored upright in a container with water in the fridge or herb keeper. It can also be washed/dried and frozen in a baggie whole for use later (it will not be crisp but will add color and flavor) Tomato – store at room temperature for best flavor. They will continue to ripen so keep an eye on them. Ripeness is determined by firmness. Tomatoes ripen from the inside out. Can be refrigerated if necessary but allow them to come to room temp before eating for the best flavor. Tomatoes that are super ripe are great for cooking with. Onions – Gladstone white onions – pulled fresh with the tops. The tops that are decent can be used the same as green scallion tops. Cucumbers – in case you missed it – How to Quick Pickle.

Last week we made a dish with all of the varieties of veggies we had on hand diced up small-sauteed in a pan then added basil, canned organic unsweetened coconut milk, corn starch as a thickener and nutritional yeast – Pasta Primavera sauce – delicious!

Farm Update: Finally getting some rain this morning! It is a nice steady shower, which is perfect for our parched soil. We have not received any measurable rain for many, many weeks. Our last rainfall on the farm was 3/4″ a few weeks ago. The pond is still low but we purchased an extension hose to reach out farther where it is a bit deeper.

We have decided to cancel the Potato Harvest Event. We dug some potatoes over the weekend, which you have in your share this week. We dug 3 beds and the harvest total was approximately what we would expect in 1 bed. This total harvest was only enough to distribute 1 1/2# to each of you this week. Generally, the harvest from 1 bed would get distributed each week. This week you will receive Dark Red Norland and/or Adirondak Red

The field tomatoes are beginning to ripen. The varieties of tomatoes we are growing this season are

Farm Events — Potato Harvest – Cancelled due to poor crop conditions. Our potato harvest will be less than stellar as anticipated due to a lack of sufficient rain.

We have our annual farm events scheduled. We will decide at a later date if they will go on depending on how the current distancing requirements evolve. These events are held outside for CSA members and their families.
