Ideas for the week – Tomato & cucumber salad, salsa, ratatouille. Quick notes about eggplant for those of you not familiar with it – this is not your typical eggplant. It is more tender, and better texture than the standard large globe eggplant. There is no need to peel or salt it. It must be cooked – not eaten raw.  Diced, sliced, grilled, or roasted eggplant will assume whatever flavoring you give it – Italian, Asian, curry….. choose your flavor. We love ours grilled after marinating in olive oil and balsamic vinegar (3:1) and a bit of salt and pepper. Some members prefer the “meatball” root if you really need to hide it… Tomatoes will be soft when ripe. These are generally much more tender than typical store tomatoes. We do our best to pack boxes so they do not get bruised. Allow them to ripen on your kitchen counter. Beans – we suggest that you blanch your beans and leave in the fridge to add to dishes or salads throughout the week.  This way they are ready to go and you can even eat them as is. If you don’t get to eat them during the week. Toss them in a freezer bag and you will have them for a time when you are ready.  (Blanch- wash, trim stem end, carefully submerge in boiling water for 2-3 minutes, drain, submerge into ice water for 3 min, drain – store) Garlic – this head of garlic is fresh out of the ground and uncured. It should be stored in open/ventilated area. The bulbs still have moisture and cloves will peel very easily. Basil-chop with oil and freeze in balls or cubes for future use.

Veggie Notes:  We do give your veggies a rinse at the farm – however, we do recommend a second wash at home as necessary.  Decisions on rinsing are made at the time of harvest and the effect it will have on your produce. Some items just store better unwashed. We do not use pesticides; therefore, it is possible that you find inhabitants in your produce. We try to restrict our plastic usage. The bags that you receive are recyclable at grocery store drop-offs.
