CSA Extension #3: Nov. 27th – Nov. 30th
CSA SHARE Celeriac (Celery Root) Watermelon Radish Black Radish Potato Cabbage (Napa,green and/or red) Carrots Baby Kale Hakurei Turnips
Our family had a relaxing week with family and friends. It was wonderful to have the older boys home from college. We hope that you were able to relax for a few days, spend some time with friends and family, and take time to pause and reflect on what you are thankful for.
We were lucky enough to have a couple of warmer days to remove the snow and row cover to harvest some baby kale this week.
Quick Tips: Celeriac – roasted, salads shredded raw, gratin, soups-pureed or diced, smashed. This will store for a while so no rush, refrigerate and maintain proper moisture. Radish – roast, saute, stir fry, slaw. Baby Kale – red russian baby kale – give it a good wash at home. We did give it a rinse but harvest was very muddy. Use it as you would other kale – saute, stir fry, soups, pesto, salads, chips. Hakurei Turnips – yes there are more this week and this is the last distribution of these for the extension share. They will store quite well. Check out the turnip page in the veg directory and our Pinterest Board if you are looking for more inspiration-burgers, roasted, raw in salads and slaws, stir fry, roast – very versatile veg. NOTE: Due to extreme frigid temps this past week. we had to move our potato storage into the walk in cooler. Some potatoes may be damp and we hope not previously frozen- please keep an eye on them.
